TRIP NOTES: The Three Stages of Breakfast

1) The days begin at first light, with a break at around 10:30 am to refuel and get back out. Refueling starts with Amish slab bacon. This is the crucial first step as the others key off the cooking of bacon. Keep the grease sizzling in a cast iron skillet.

2) When the bacon is crisp remove it and crack the eggs directly into the sizzling grease. Apply liberal amounts of sea salt and pepper.

3) Cut up the leftover salt potatoes (Upstate New York style) and fry those in the remaining grease. Also douse with sea salt and pepper.

Eat a healthy dose in order to continue fishing for hours on end without further interruption.

Optional: Add Montreal Steak Seasoning to any or all stages according to personal preference.

    Fortunately it never came to that. When you consider this meal is designed to offset the prior night’s beer, that’s good news.
